Organoleptic:
An elegant sparkling wine with a light, yellow-green colour and fine bubbles with intensity and duration. Aromas of rose petal, brioche and honey are lifted by a refreshing acidity.
Food pairing:
Perfect as aperitif or dessert.
Served at 8 °C.
Origin:
A privately owned vineyard at Perpatiara (Tegea), Arcadia, Peloponnese. Altitude: 750m.
Soil: clay rocky. Harvest: Early October.
Yield: 60-70 hl/he. Age of vines: 30 years.
Agriculture: Mild.
Vinification:
The grapes are harvested early for low potential alcohol in order to create the base wine. A traditional method is used with the second fermentation in the bottle. Acidity: 6.15 g/L TA, Residual sugar: 12.0 g/L.
