The privately owned vineyards in the hills of Siva, Heraklion, Crete.
Altitude: 400-600m. Soil: clay, limestone.

Agriculture: Organic-Biodynamic.
Vinification:
Pre-fermentation cold maceration followed by alcoholic fermentation in stainless steel vats at a controlled temperature. Acidity: 6.1 g/L TA, Residual sugar: 1.4 g/L.
