Organoleptic:
Clear and vivid colour with golden-yellow nuances, intense bubbles and crystal transparency. Rich aromas of citrus blossoms, apple and pear. On the palate, it has a youthful and lively taste, flavours of lemon blossoms, coconut, almond and fine spices. It impresses with its creamy texture, the refreshing acidity, and the long aftertaste.
Food pairing:
Excellent pair with oily fish, like salmon. It can also be enjoyed on its own as an aperitif or after a meal. Served at 6-8 °C.
Origin:
The vineyards of Zitsa, Epirus.
Altitude: 550-650m. Soil: sandy clay.
Harvest: second fortnight of September.
Yield: 60-70 hl/he.
Age of vines: 20 years (average).
Agriculture: Mild.
Vinification:
It is produced using the traditional method of Champagne. The free run juice is gradually extracted from selected grapes. The long fermentation period in bottles in ideal temperature and moisture conditions grants the delicate palate and aroma of the wine, a rich foam and long duration of the bubbles.
