Organoleptic:
A fresh, vivacious, crisp white wine, which expresses all the mineral and citrus characteristics of Robola variety. Complex, balanced and dry, with an orange blossom nose and a long finish.
Food pairing:
A perfect partner for seafood, oysters, lobster spaghetti.
Served at 10 - 12 °C.
Origin:
The mountainous vineyards of Cephalonia Island. Extremely low yields.
Altitude: 300-800m.
Soil: limestone, rocky, barren.
Harvest: End of August - September.
Yield: 30 hl/ha. Age of vines: 40 years (average).
Agriculture: Mild.
Vinification:
Classic white vinification process. Fermentation in stainless steel vats at controlled temperatures of 15-17 °C. Acidity: 6.7 g/L TA, Residual sugar: 1.5 g/L.
