Pale yellow colour with green hues. A rich and complex nose, dominated by citrus peel, gives way to a palate full of intense, vivacious peach fruit with notes of white pepper and fresh ginger. Concentrated and powerful with a refreshing acidity, lovely drinking.
Aegean grilled shrimps, Oven-baked fish, Greek 'kefalograviera' cheese. Served at 10 - 11 °C.
The vineyards in Episkopi, Akrotiri and Pyrgos villages, Santorini Island, Cyclades.
Altitude: 100-350m. Soil: volcanic and dry.
Harvest: Handpicked, Mid-August.
Yield: 25-30 hl/he.

Typical white wine vinification techniques. Alcoholic fermentation in stainless steel tanks, under controlled temperatures. Acidity: 6.9 g/L TA, Residual sugar: 1.4 g/L.
