Organoleptic:
A wine with layers of complexity and spicy fruitiness. Yellow-green in colour, distinctive aroma of apricot and honey blends perfectly with the notes of citron and lemon. A variety of recognisable, distinct fragrances, integrated with hints of vanilla and dry nuts, elegant, fat with a well-balanced acidity structure that results in a potential for ageing. A classy blend of Greece and white Bordeaux.
Food pairing:
A perfect match for Mediterranean dishes, seafood, poultry, light-sauced pasta dishes and fresh vegetable salads. Best served at 8-10 °C.
Origin:
The privately owned organic vineyard at the foot of Pangeon, Kokkinohori village, Kavala, Northeastern Greece. Altitude: 380m.
Soil: rocky, barren, limestone, clayey.
Harvest: End of August. Yield: 50-60 hl/he.
Age of vines: 20 years (average).
Agriculture: Organic.
Vinification:
Cold maceration for 12 hours. Fermentation and maturation for 5 months in French oak barrels(50% new, 50% second-hand). Acidity: 7.5 g/L TA, Residual sugar: 2.1 g/L.
