Organoleptic:
Deep red colour. A complex nose and flavour with considerable character. It shows off the potential of this grape, tannin, acidity, and fruit. Demands meat, will improve over the next 3-5 years.
Food pairing:
Red meat, wild boar, piquant cheese. Served at 16 - 18 °C.
Origin:
The vineyard 'Plakoura'(not irrigated), Karkadiotisa area, Heraklion, Crete.
Altitude: 500m. Soil: sandy-loam.
Harvest: Mid-September. Yield: 35-40 hl/ha.
Age of vines: 18 years. Agriculture: Mild.
Vinification:
Fermentation with selected yeasts at a temperature of 25-28 °C. Maturation in oak barrels for 12 months and further ageing in the bottle for 9 months. Acidity: 5.6 g/L TA, pH: 3.50, Residual sugar: 2.1 g/L.
