Organoleptic:
Aromas of strawberry, roses, vanilla and sweet spices on the nose, plenty of volume and richness on the palate, where the aromas of the oak balance with the pleasant acidity and the fruity aftertaste. The wine’s aromatic power and tannic structure reveal strong character and great ageing potential.
Food pairing:
An excellent pair for red meat and game. Served at 16 - 18 °C.
Origin:
Selected blocks of the Yianakohori vineyard, Naoussa, northwestern Greece.
Altitude: 230-320m. Soil: Loam clay.
Harvest: End of September. Yield: 50-60 hl/he.
Age of vines: 40 years.
Agriculture: Sustainable.
Vinification:
Pre-fermentation cold soak at 8-10 °C for 6 days. Alcoholic fermentation for 12-15 days at controlled temperatures of no more than 25 °C. Ageing for 18 months in 225-lt and 500-lt French and American oak casks, plus further 6 months in the bottle. Acidity: 5.5 g/L TA, pH: 3.54, Residual sugar: 3.3 g/L.
