A strikingly aromatic bouquet redolent with notes of freshly ground black pepper. Pleasant acidity and soft, rounded tannins which melt on the palate.
Try it with opulent fish dishes, peppery cheeses and recipes including cured meats.
Served at 16 - 18 °C.

Altitude: 700-800m. Soil: Sandy-loamy.
Harvest: Early October. Yield: 40-60 hl/he.
Age of vines: 30 years(average).
Alcoholic fermentation takes place in a small stainless steel open vat and the cap is manually plunged thrice per day. The temperature during fermentation is controlled between 20-25 °C. The wine matures in French large casks on its lees for about two months. The maturation process continues in the barrels for six more months after racking off the lees.
