Organoleptic:
Inky purple colour. Generous, layered aromas of red and black fruits, bitter chocolate, cinnamon, spiced with hints of licorice and wild mint. On the palate, it is concentrated, with a meaty flavour profile, cherries, vanilla and oak. Smooth texture, round tannins, endless aftertaste. Excellent, modern-style dry Mavrodaphne.
Food pairing:
A hearty Greek beef stew 'stifado-mosharaki', roasted wild boar. Served at 16 - 18 °C.
Origin:
The privately owned vineyards in Cephalonia Island.
Altitude: 80-500m.
Soil: limestone, rocky, barren.
Harvest: End of September.
Yield: 30 hl/ha. Age of vines: 30 years (average).
Agriculture: Mild.
Vinification:
The wine undergoes malolactic fermentation before being carefully matured for at least 12 months in top quality French and American barriques. The wine is matured for a further 12 months in bottle before release. Acidity: 6.5 g/L TA, Residual sugar: 3.2 g/L.
