Organoleptic:
Deep purple colour with a ripe yet fresh nose of plums and blueberries, meat, chocolate and spice. Velvety on the palate with intense vanilla flavour, supple tannins and fine concentration.
Food pairing:
Excellent pair for juicy red meats, venison, roasted wild boar. Served at 16 - 18 °C.
Origin:
The privately owned vineyards on the southeast slopes of Olympus, in an area called 'Prosilia Rapsani'.
Altitude: 550-650m.
Soil: calcareous, rich in organic materials.
Harvest: September - Early October.
Yield: 40-45 hl/he. Age of vines: 25 years.
Agriculture: Organic.
Vinification:
Classic red vinification method. Maturation in French and American oak barrels for 12 months and aged in bottles for 24 months. Acidity: 6.1 g/L TA, Residual sugar: 2.1 g/L.
