Organoleptic:
Dark ruby and concentrated, elegant, with a pronounced bouquet of black fruits (flavours of ripe plum, cherry) and spices. On the palate, the wine offers gentle tannins enhanced with great fruit intensity, yet round and harmonious. The finish is spicy, long and persistent.
Food pairing:
A perfect companion for many savoury dishes and matured cheeses. Served at 16-18 °C.
Origin:
The privately owned single vineyard of 74ha in Epanomi, Thessaloniki.
Altitude: 60-100m. Soil: mainly sandy with a few clayey substrates and calcareous rocks, rich in sea fossils.
Harvest: End of August. Yield: 50-60 hl/he.
Age of vines: 25 years (average).
Agriculture: Sustainable(Agro 2.1-2.2 certified).
Vinification:
Classic red fermentation method. Maturation for 12 months in French oak barrels. Acidity: 5.7 g/L TA, Residual sugar: 3.0 g/L.
