Organoleptic:
Intense red colour with hints of titian. Complex aromas of dark cherry, blackcurrant, dark chocolate, cinnamon and sun-dried tomato. On the palate, flavours of red fruits, tomato, olive and vanilla. Rich in tannins with a lingering aftertaste.
Food pairing:
An excellent pair for red meat and game.
Served at 16 - 18 °C.
Origin:
A privately owned organic vineyard of 12 hectares in Bindabla and Fyliria, within the wine-growing region of Goumenissa, Pella, northern Greece. Altitude: 150-200m. Soil: sandy loam(Bindabla), sandy clay(Fyliria). Harvest: End of September.
Yield: 50-60 hl/he. Age of vines: 20 years (average).
Agriculture: Organic.
Vinification:
Pre-fermentation cold maceration for 2 days. Alcoholic fermentation at a controlled temperature. The wine remaining with the lees for 8 months with periodic stirring. Maturation for 12 months in French oak barrels, further ageing for 6 months in the bottle. Acidity: 7.6 g/L TA, Residual sugar: 3.1 g/L.
